A Taste of Carowinds: Bread Pudding with Salted Caramel Sauce

Have a craving for some delicious Carowinds desserts? Well, A Taste of Carowinds is here once again to rise to the occasion. We are giving you some of Executive Chef Mitch Weaver's park recipes to make in the comfort of your own home. This week's featured recipe is Bread Pudding with Salted Caramel Sauce. Let's get started! 

Carowinds Bread Pudding and Caramel Sauce Recipe


Bread Pudding

  • 5-6 Cups - Old/leftover Plain Bread (no rye, sesame or herb type)
  • ½ Cup - Melted Unsalted Butter
  • 1 Cup - Brown Sugar
  • ½ Cup - Granulated Sugar
  • 2 Cups - Heavy Cream (3 cups whole milk, simmered and cooled can be used instead)
  • 3 - Whole Eggs
  • 1 T. - Cinnamon
  • 1 tsp. - Vanilla Extract
  • Optional: 1 Cup -Dried Fruit, Chocolate Chips or Pecans

Salted Caramel Sauce

  • 1 Cup - Brown Sugar
  • ½ Cup - Heavy Cream
  • 4 T. - Butter
  • 1 T. - Vanilla Extract
  • 1 ½ T. - Kosher or Sea Salt (or 3/4 T. Iodized Salt)

Cooking Instructions

Bread Pudding

  • Pre-heat oven to 350 degrees.
  • Cut bread into ½-inch pieces.
  • On sheet pan toss bread with ¾ of butter. Reserve remaining butter for later.
  • Place in oven.

  • In mixing bowl mix together both sugars and eggs until combined.
  • Add cream, cinnamon and vanilla to sugar mixture. Stir to combine. 

  • Remove bread from oven once brown and dried out. Let cool.
  • Add Bread to wet mixture and toss gently with a spatula until bread is coated and beginning to soak up moisture. If slightly dry, slowly add a little cream.
  • Let sit for 5-10 minutes.
  • Spread the remaining butter on the bottom and sides of baking dish.
  • Add bread mixture to pan and place in oven. Bake 25-35 minutes until it starts to brown.
  • Cover pan with foil and continue baking for 20 more minutes.
  • Remove from oven, cool for 10-15 minutes.
  • Cut serving pieces, move to individual plates and drizzle with Salted Caramel Sauce (recipe below).   

Salted Caramel Sauce 

  • Add all ingredients except salt to a saucepan.
  • Cook on medium heat, stirring constantly.
  • Continue cooking and stirring until mixture simmers - you will see small bubbles throughout.
  • Remove from heat & stir in Salt (Unsalted Sauce use 1 TSP).
  • Cool.
